Cheeks Hashed Kentucky Housewife 1839
After boiling them tender, mince the meat fine from the bone, put it in a pan, with enough water for the gravy, add a large spoon full of butter, rolled in flour, a minced onion, a spoonful of lemon pickle, or a vinegar, one of tomato ketchup, a teaspoon full of curry powder, and a little salt and pepper; simmer for a few minutes, and serve it up. These are very good dishes when rightly prepared, though through prejudice, or for a lack of knowledge how to prepare them, they are seldom used.
